SAGE AND
ONION STUFFING
225g/ 1/2lb. breadcrumbs
225g/ 1/2lb. onion, finely chopped
1 dessertspoon dried sage
12g/ 1/2 oz. butter,
2 eggs,
Coedwynog goose liver,
Salt and pepper.
Chop
onions finely and cook in butter until soft, finely chop liver and cook
further 5 minutes - mix rest of ingredients and season to taste, fill
body cavity.
