Roast Potatoes 2 lbs of
peeled potatoes Boil the potatoes in salted water for 10 minutes. Meanwhile heat the Goose Fat in a tray at 200°C/Gas Mark 6 until it smokes slightly (about 10 minutes). Drain the potatoes and carefully pour them into the tray, baste with the Goose Fat and cook for a further 30 minutes until brown and crisp.
